Double Chocolate Pancakes

These chocolate greek yogurt pancakes are an absolute dream! Seriously they are so soft and fluffy they are unreal. When you combine this with chocolate protein ‘frosting’ then you really do have a match made in heaven.

Don’t let that chocolatey goodness fool you, because these incredibly delicious pancakes are still a nutritious breakfast, jam packed with goodness, and with pancake day just around the corner they are the perfect sweet American style pancake to start your day off.

Serves: 1           Time: 20 minutes          Difficulty: Easy


Ingredients

  • ¼ Cup of Greek Yogurt
  • ½ Banana
  • ½ Cup of Rolled oats
  • 1 Tbsp of cacao Powder
  • 1 Egg
  • 1-2 Tbsp of Almond Milk
  • ½ Tsp of Baking Powder
  • ½ Tsp of Vanilla Extract
  • 2 Strawberries (Sliced)(Optional)
  • 2 Tsp of Cacao Nibs (Optional)
  • 2 Tsp of Maple Syrup (Optional)

Chocolate Frosting

  • ¼ Cup of Greek Yogurt
  • 2 Tbsp of Chocolate Protein Powder*

Directions

  1. Add the oats to a food processor and blend on high until broken down.
  2. Add the remaining ingredients and blend on high until the batter is smooth and frothy. Leave to sit for a few minutes.
  3. In the meantime make the frosting by mixing the Greek yogurt and protein together together and put to one side.
  4. Heat a non-stick pan over a medium heat and coat with coconut oil.
  5. Once the oil in the pan is hot add the batter 2 large Tbsp at a time and cook until the mixture is just set and bubbles start to appear on top (around 2-3 minutes).
  6. Flip the pancake and cook for a further 2 minutes.**
  7. Repeat this process with the remaining batter, ensuring you coat the pan each time.
  8. Once cooked, layer the pancakes with the chocolate frosting and any other desired toppings such as strawberries, chopped nuts, maple syrup or cacao nibs.

*Alternatively you can mix greek yogurt with 1 tsp of cacao powder and 1 tsp of Maple Syrup for a similar frosting.

**Store your cooked pancakes in a low heated over (around 60-80°C) to keep warm while you cook the others.
