There are 2 types of chocolate in this world that remind me of my family. They are both of the dairy milk chocolate variety; one their ‘Turkish Delight’ chocolate bar, and their other the ‘Fruit and Nut’ bar. This is because growing up, every Saturday, my mum, dad and I would always share a family sized bar of chocolate. It became a bit of a tradition. We didn’t eat very many sweet things during the week but always thoroughly enjoyed sharing a bar of chocolate in front of the tv on the Saturday nights we were all home.Turkish Delight or Fruit and Nut were always top of the menu. This is why when I decided to make my own advent calendar I knew I had to include at least one of these flavours. Since I haven’t quite figured out how to make sugar free Turkish delight, I decided that the Fruit and Nut version was the more sensible choice (However I’ll let you know if I ever solve the sugar-free Turkish Delight Conundrum). Let’s cut straight to the chase, there are very few chocolates in the world that can beat Reese’s Peanut Butter Cups! They are amazing! There have been many a time where I have tried to justify eating these by telling myself they are semi healthy (I mean they contain peanut butter for God’s sake, fitness lovers favourite energy boost!). ‘Tis the season to be jolly, fa-la-la-la-la-la-la-la-la’ … Well almost! I am sooooooooooo excited for the festive season!!! I love Christmas!! I mean really love Christmas!! It is my absolute favorite holiday of the year. What is there not to love? Spending time with family, presents, cwtching in front of the fire, trashy tv, celebratory nights out (usually as a teacher celebrating the fact we’ve survived another year!!), and FOOD! Oh all the glorious food!At no other time of year is it as socially acceptable to eat as much amazing goodies as it is at Christmas time (except maybe birthdays (oh and Thanksgiving for any American friends)). Every Christmas my Dad is in charge of savory and I’m in charge of sweet, and I take this role very seriously. Preparation usually starts in about October where my Pinterest boards and recipe books start to take a serious hit with festive cakes, biscuits and breads. By December I am bouncing off the walls with excitement at finally being able to make and eat some of the recipes I’ve been staring at for months!

For those of you who are thinking that I haven’t posted a recipe in over a week, I hope you will forgive me! There is a big project coming up this weekend which is taking up a lot of my time. This weeks Kick Up the Hump is getting us all ready for this weekends post. If you want to live a healthier lifestyle you have to look on it as a positive. Don’t look on it as restricting your choices but instead you are creating healthy opportunities! What’s coming up here on Living Energetically over the festive season is proof of that!

I think it’s safe to say Winter has officially arrived!! I’m beginning to forget what sun looks like. Don’t get me wrong I love winter, dark DVD nights with a blanket in front of the fire are some of my favorite. Especially when the wind is howling outside, and your warm and cosy indoors. But there is one problem with the current weather outside, it’s not winter yet!! It’s still Autumn. When did we skip the lovely autumn coloured trees, and cold sunshiny days? If they did happen I must have blinked and missed them. So I am rebelling! I am not simply accepting that autumn didn’t happen and until December 1st kicks in (where I promise I will turn into full on Winter and Christmas mode) I am holding on to autumn for all it’s worth.
This dish is a weeknight favourite as it involves minimal effort and minimal cleaning up afterwards. I can come in from work or the gym and have it on the table 40 minutes later and had time to make the next days lunches while it’s simmering away.The bell peppers in this dish contain plenty of vitamin A and vitamin C (especially if you use red peppers). Vitamin C helps protect the cells in your body (and can even keep your skin looking fabulous), while vitamin A helps your immune system work and help your vision (it’s not just bugs bunny and his carrots who can see in the dark you know!) In work this week I introduced Living Energetically to my work colleagues, which led to a few conversations about living a healthy life style. These conversations are nothing new in my department and there are constant conversations about living healthy, trying to lose weight, and food in general (however I’m pretty sure this is the case in most offices and work places!!). I don’t think a Monday has passed yet this year without someone trying a new diet. By Thursday however the trips to the sandwich shop have started and packets of biscuits have re-immerged (but I think 8 hours a day with hormonal teenagers in school is as good a reason as any to justify cake or pizza rolls on a Friday!).
